Day was born in Haverfordwest and grew up in Lamphey. A keen all-round athlete while at school, he competed for Wales as a discus thrower.
Day joined Scarlets Academy at the age of 18 and progressed to Scarlets' feeder club, Carmarthen Quins RFC, a couple of years later.
In the 2005/06 season Day joined Llanelli RFC and made his debut against Pontypool RFC.
He turned out for Llanelli from 2006 to 2011 before a brief shift to Llandovery RFC in 2012, all the while representing Scarlets in the regional division.
Day signed with Bath in 2012 and remained there until 2016 before moving to Japan for one season to try his hand at the Japanese club scene with Toyota Verblitz. His efforts in Japan impressed the Melbourne Rebels' scouts and he was offered to join the Super Rugby franchise on a one year deal which he accepted.
Day joined Saracens in 2017 and currently has 34 caps for the club.
