The New Zealand-born wing for cut his teeth in professional rugby with the Crusaders back in 2002 playing Super Rugby. The Kiwi flyer decided to move abroad in 2004 and joined Bath, where he regularly topped the club's try scoring charts. In 2009 Maddock joined Italian club Benetton Treviso for their inaugural season in the Pro 12. Maddock moved back to England and joined Saracens in the 2011/12 season, where he has continued to be a quality finisher and a danger out wide with ball in hand.
Maddock went into coaching after retirement and was the Canterbury assistant coach in each of the three title-winning seasons between 2015 & 2017.
Maddock ran Canterbury's backs under Scott Robertson and Glenn Delany before being named as the side's new head coach following Delany's departure taking the reigns from the 2019 Mitre 10 Cup season
