Latu first signed for the Knights ahead of the 2011/12 campaign from fellow Yorkshire side Wharfedale, before joining the Dalesman.
The Tongan international had enjoyed spells at Bradford & Bingley, Hull and Jersey, where he became the Islanders first ever professional player.
He returned to Doncaster Knights in 2016.
